Q. When I create a Service Plan for Windows 10 upgrade in Configuration Manager 1511 what SKU is it servicing?

A. Servicing Plans are a way to automatically create deployment packages for new branches of Windows 10 as previously covered. In the Servicing Plan you can select the branch (Current Branch vs Current Branch for Business) and an additional delay but you do not select a SKU, for example Pro vs Enterprise. Today the way the Servicing Plan works is the package created contains all versions which means it creates a large package. The client will automatically select the correct version based on its version of Windows 10. I expect this may change in the future with the ability to filter the version required to reduce the package size.
